chore(dotfiles): add nvim config mapping and theme bootstrap hook

Adds DOTFILES_DIR env, maps ~/.config/nvim and theme plugin symlink, and adds pre-packages bootstrap hook to sync theme directory. Ensures nvim theme files are available on bootstrap.
