refactor(tmux): clean up terminal settings and adjust keybindings

- Enable tmux-256color and universal RGB/clipboard terminal features
- Remove stale commented-out terminal overrides and default-shell
- Update escape-time and workmux popup binding
- Rebind t→o for the t script
